What’s For Breakfast!? “Amy’s Cereal Cafe!”


While visiting New York City we popped into Kellogg’s NYC, and fell in love with this fun new trend of a Cereal Cafe! It completely elevates your everyday cereal bowl, taking it to a whole new level! Set it up the night before, add a little fresh fruit and you have an amazing breakfast for all ages!~Amy

“Amy’s Cereal Cafe”

Ingredients:
Assorted Cereals…
Assorted fresh fruit…
Assorted nuts, granola, dried fruit, etc..
Caramel Honey, maple syrup, Blueberry Drizzle, etc…
Milk, half and half or as my grandma says, cream..

Brooke’s:
Apple a Day!
Rice Chex, Cinnamon Toast Crunch, Honey Crisp Apple, diced, dried cranberries, with a Honey Carmel* drizzle.

Stephanie’s:
“Livin the High Life”
Life, Special K Oats and Honey, diced fresh pears, toasted pecans, topped with a maple syrup drizzle.

Mindy’s:
“Lemon Sun Blueberry Sky”
Smart Start, Special K,
Fresh blueberries , fresh lemon zest, sliced almonds, and topped with a Blueberry Jam drizzle.

Jeff’s:
“Razzle Dazzle Day”
Honey Bunches of Oats, Original Kellogg’s Corn Flakes, with fresh raspberries, diced peaches, toasted pecans and a Honey Caramel drizzle.

Tiffany’s:
“Strawberry Fields Forever*
Original Special K, Frosted Flakes, fresh strawberries, sliced, lemon zest, copped pistachios, and topped with a strawberry jam drizzle.

Jane’s:
“Tango Sunrise*
Vanilla Almond Special K, Corn Chex, fresh mango, diced, orange zest, shredded coconut, macadamia nuts with a creamy coconut syrup drizzle.

Madeline’s:
“Bahama Babe”
Rice Chex, Special K Oats and Honey, fresh diced mango, lime zest, toasted coconut, macadamia nuts, with a creamy coconut syrup drizzle.

Ozma’s:
“Monkey Business”
Rice Krispies, Vanilla Rice Chex, fresh banana, sliced, honey roasted peanuts, chopped, topped with a Honey Caramel drizzle.

 

 

Honey Carmel Recipe:

4 tbsp butter

1/2 cup brown sugar

1/2 cup honey

1/2 tsp vanilla

dash of salt

Melt butter in a small saucepan. Stir in brown sugar and cook until bubbly. Add honey and salt. Stir until well mixed, remove from heat and add vanilla. Serve warm.

Jam Drizzle:

Thin jam slightly with fruit juice or water, to desired consistency.

Coconut Drizzle:

Coco Lopez Coconut Sweetened Syrup

Who doesn’t love Cary Grant? Whether in a Hitchcock thriller or “That Touch of Mink” he is always so classy, a tuxedo gentleman. White chocolate popcorn, with a dark chocolate drizzle, definitely a black tie winner. ~Amy

Cary Grant~Black Tie
Black and White Chocolate

3/4 cup corn, popped and sorted
2 cups sugar
2/3 cup half and half
1 tbsp corn syrup
1/4 tsp salt

1/2 tsp vanilla
1/2 cup white chocolate chips, Ghirardelli, or Guitard
1/2 cup semi-sweet, or bittersweet chocolate pieces, melted

Line a large baking sheet with foil, set aside.

Place popped corn into a large bowl. Set aside.

In a medium saucepan, whisk together sugar, half and half, cherry juice, corn syrup and salt. Cook over medium high heat until mixture reaches a Thread Stage using cold water method or 232 degrees, stirring constantly. Remove from heat and stir in vanilla and white chocolate. Stir until smooth. Pour over popcorn and stir quickly to coat. Spread onto prepared sheet to cool, drizzle with melted chocolate. And refrigerate briefly to set.

Makes 8-10 cups

Apple Pie White Chocolate

3/4 cup corn, popped and sorted
2 cups sugar
2/3 cup half and half
1 tbsp corn syrup
1/4 tsp salt

1/2 cup white chocolate piece, Ghirardelli or Guitard
1/2 tsp vanilla

Mix together and set aside:
1/4 cup sugar
1/2 tsp cinnamon
1/2 tsp apple pie spice

Line a large baking sheet with foil, set aside.

Place popped corn into a large bowl. Set aside.

In a medium saucepan, whisk together sugar, half and half, cherry juice, corn syrup and salt. Cook over medium high heat until mixture reaches a Thread Stage using cold water method or 232 degrees, stirring constantly. Remove from heat and stir in vanilla and white chocolate. Stir until smooth. Pour over popcorn sprinkle in desired amount of cinnamon mixture as you stir, stirring quickly to coat. Spread onto prepared sheet to cool, and sprinkle with additional cinnamon mixture if desired.

Makes 8-10 cups

2 tbsp maraschino cherry juice
1 tbsp corn syrup
1/4 tsp salt

1/2tsp vanilla
2 drops red food coloring

Line a large baking sheet with foil, set aside.

Place popped corn into a large bowl. Set aside.

In a medium saucepan, whisk together sugar, half and half, cherry juice, corn syrup and salt. Cook over medium high heat until mixture reaches a Thread Stage using cold water method or 232 degrees, stirring constantly. Remove from heat and stir in vanilla and food coloring. Pour over popcorn and stir quickly to coat. Spread onto prepared sheet to cool.

Peanut Butter S’mores Popcorn

3/4 cup popcorn, popped and sorted
1 cup brown sugar
1 cup white sugar
2/3 cup half and half
1 tbsp corn syrup
1/4 tsp salt

1/3 cup peanut butter
1/2 tsp vanilla

4 full sheet graham crackers, broken into pieces
1 1/2 cups mini marshmallows
1/2-1 cup milk chocolate chips, melted

Line a large baking sheet with foil. Set aside.

Place popcorn in a large mixing bowl, stir in graham cracker pieces and marshmallows. Set aside.

In a medium sized saucepan, whisk together sugars, half and half, corn syrup and salt. Cook over medium heat to Thread Stage using cold water method, or 232 degrees, stirring constantly. Remove from heat and stir in peanut butter and vanilla. Pour over popcorn and stir quickly to coat. Spread onto prepared sheet to cool. Drizzle warm popcorn with milk chocolate, and refrigerate to set.

Makes about 10 cups

2 tbsp fresh squeezed lemon juice
1/2 tsp vanilla
Zest of 1 lemon

Line a large baking sheet with foil. Set aside.

Place popped corn into a large mixing bowl. Set aside.

In a medium sized saucepan, whisk together sugar, half and half, corn syrup and salt. Cook over medium high heat to a Thread Stage using cold water method or 232 degrees. Remove from heat and whisk in chocolate, lemon juice, zest and vanilla. Pour over popped corn, and working quickly, stir to coat. Spread onto prepared baking sheet to set.

Makes 8-10 servings

Ambrosia Apple, Manchego, and Raspberry Peach Champagne Grilled Cheese

I fell in love with this flavor combination! The rich brioche rolls, combined with tart sweet apples, the subtly of Manchego cheese, and enveloped with elegant preserves. A very ladylike grilled cheese! ~Amy

Ambrosia Apple, Manchego, and Raspberry Peach Champagne Grilled Cheese

4 Brioche rolls, halved or country white bread sliced
1- 2 small ambrosia apples, thinly sliced
Manchego cheese, grated
Stonewall Raspberry Peach Champagne Preserves, or other preferred preserves
Butter

Heat grill pan to medium heat. If using sliced bread, butter one side of bread and place butter side down on grill or Toas-Titie. Place a small amount of cheese and sliced apples onto bread. Spread a desired amount of preserves on another slice of bread. Place bread preserve side down and butter on top piece. Repeat.
Cook sandwiches on both sides until golden brown.

Makes 4 servings
