Avocado, Arugula, and Orange Olive Oil Pizzette

One of my favorite easy meals is avocados on toast, with a little fresh cracked pepper and sea salt. I thought it might be fun to try it as a pizza, with a little orange olive oil drizzle and fresh arugula. Give it a try, and it might be your next favorite too! ~Amy

Avocado, Arugula, and Orange Olive Oil Pizzette

Pizza dough for 1 large pizza
2-3 avocados, thinly sliced
Fresh arugula
Scaibica’s Orange Infused Olive Oil
Pistachios, dry roasted and salted, coarsely chopped

Olive oil
Fresh cracked pepper
Sea Salt

Heat oven to 475 degrees

On a lightly floured board roll dough to desired thickness. Brush with olive oil and sprinkle with sea salt and fresh cracked pepper. Slide dough onto baking steel, baking stone or lightly oiled baking sheet and bake until golden brown.

Top crust with sliced avocado, top with arugula, and chopped pistachios, drizzle with orange infused oil, fresh cracked pepper and sea salt to taste.
Serve immediately.

Heirloom Garden Tomatoes, with Fresh Basil and Orange Infused Olive Oil

2-3 cups baby heirloom tomatoes, halved or quartered
3-4 fresh basil leaves, snipped
1-2 tbsp Scaibica’s Orange Infused Olive Oil
Fresh cracked pepper and sea salt

In a medium sized bowl, toss tomatoes with olive oil and sea salt. Add fresh basil. Serve either chilled or at room temperature.

Makes 4-6 servings

Goat Cheese, Baby Greens, and Shaved Beet Pizza with an Orange Infused Olive Oil Drizzle

Goat Cheese, Baby Greens, and Shaved Beet Pizza with an Orange Infused Olive Oil Drizzle

Crust:

1 cup warm water
2 tsp dry active yeast
1 1/2 tbs olive oil
1 1/4 tsp sugar
1 1/4 tsp salt

Bread machine method:
Place all ingredients in bread pan.
Set for dough cycle.

Traditional method:
In a large bowl, place warm water. Mix in yeast and sugar, let sit until it starts to bubble, about 2-3 minutes. Stir in olive oil. Add flour and salt and mix until it forms a ball. Knead for about 5 minutes. Grease bowl and turn dough to coat. Cover and let rise for about 1 hour.
Pre-heat oven to 500 degrees
Divide dough if desired, to make smaller pizzas.
On a lightly floured board, or pizza peel, roll dough to desired thickness.

Toppings:
Olive Oil
Goat cheese, crumbled
Fresh mozzarella, diced
Fresh baby greens
Beets, cooked, and thinly sliced or shaved
Orange infused olive oil, like Sciabica’s California a olive oil
Fresh basil leaves
Sea salt
Cracked fresh pepper

To Assemble:
Drizzle a small amount of olive oil onto formed pizza dough, brush to coat. Sprinkle evenly with mozzarella, and goat cheese reserving a small amount for the top. Season with sea salt and fresh cracked pepper. Slide crust onto baking stone or baking steel and bake until crust is golden brown and cheese is melted.

Top with baby greens, and shaved beets. Sprinkle with remaining goat cheese, basil leaves and lightly drizzle with orange oil.

Serves 4-6
