Sweet cherries are just coming into season. I thought it might be fun to try them out in a salad, and I love it!~Amy

Bing Cherries, Basil and Goat Cheese Salad with Creamy Fresh Blueberry Dressing

Salad:
Mixed baby greens
Bing cherries, pitted and halved
2-4 fresh basil leaves, torn
Goat cheese, crumbled
Candied pecans
Sea salt
Fresh ground pepper

Place greens and basil in a large serving bowl. Top with goat cheese, cherries and pecans. Season with a little salt and pepper and serve with Blueberry Dressing.

Creamy Blueberry Dressing

1/2 cup sour cream
Juice of 1 lime
4 tbsp fresh or frozen blueberries
2 tbsp sugar

Place all ingredients in blender or small food processor and blend until smooth.

Makes about 1 cup

Summer Fresh Tomato Basil Caprese Pasta Salad



On summer nights our family likes to have late night dinners outside in the patio. We light the candles and turn on the party lights and talk about our day. One of our favorite dinners is to have a platter of build your own caprese sandwiches. With a little variation, fresh tomatoes and basil from your garden, mozzarella, and fresh cooked pasta, you have the makings for your own magical summer night. ~Amy

Summer Fresh Tomato Basil Caprese Pasta Salad

1 lb pasta, cooked
Grape tomatoes halved
Basil leaves, torn
Small, fresh mozzarella
Olive oil
Balsamic reduction
Sea Salt
Black Pepper

Place pasta in a large dish.
Cover in layers starting with basil leaves, fresh mozzarella, and tomatoes. Drizzle with olive oil and balsamic glaze. Season with salt and pepper. Serve at room temperature.

Serves 4-6

Fresh Black and Blueberry Chilled Soup with Buttered Purple Basil Toast Soldiers


Who would think that adding a little fresh snipped basil and black pepper to buttered toast would be so delicious?!?! Paired with a chilled berry soup, a simply delightful dinner for a hot summer night! ~Amy

Fresh Black and Blueberry Chilled Soup with Buttered Purple Basil Toast Soldiers

Soup:

1 cup fresh blackberries
1 cup fresh blueberries
1 cup vanilla Greek yogurt
1 1/2 -3/4 cup fresh orange juice
2 tbsp sugar or honey

Place all ingredients in a blender and mix on high. Chill until ready to serve.
Serve with Basil Toast Soldiers.

Makes 4 servings

Toast:

4 pieces of sourdough or French country bread, thinly sliced
Butter
Fresh cracked pepper
Sea salt
Fresh purple basil, snipped
(Regular basil maybe substituted)

Toast bread until golden brown. Butter generously. Top with fresh cracked pepper, salt and snipped basil. Cut off the sides of toast, and cut into even strips about 1/4 inch wide.

Makes 4 servings

Fresh Zucchini and Yellow Sqaush Pizza with a Lemon Olive Oil Drizzle

1 recipe pizza dough
Pizza sauce
Yellow squash, spiralized or thinly sliced
Zucchini, spiralized or thinly sliced
Mozzarella, grated
Fresh basil leaves, torn
Thinly sliced lemon
Lemon olive oil, or traditional olive oil
Sea Salt
Fresh cracked pepper

Place pizza steel or pizza stone in oven.
Heat oven to 450 degrees

On a lightly floured board or roll out pizza dough to desired thickness, or greased pizza pan. Top with pizza sauce, zucchini, yellow squash, basil leaves and grated mozzarella. Slide onto baking steel or stone.
Cook until edges are golden brown and cheese is bubbling. Top with lemon slice, and drizzle lightly with olive oil. Sprinkle with sea salt and fresh cracked pepper.

It’s common practice that Friday night, is pizza night! So here is a fun twist, which will be perfect for a pizza party of 12 or 1!

Smoked Mozzarella, Baby Heirloom, and Fresh Basil Pizza

1 recipe pizza dough
Pizza sauce
Baby heirloom tomatoes, halved or quartered
Smoked fresh mozzarella, sliced
Fresh basil leaves, torn
Rosemary oil, or traditional olive oil
Sea Salt
Fresh cracked pepper

Place pizza steel or pizza stone in oven.
Heat oven to 450 degrees

On a lightly floured board or roll out pizza dough to desired thickness, or greased pizza pan. Top with pizza sauce, sliced mozzarella, and basil leaves. Slide onto baking steel or stone.

Triple Bacon and Triple Tomato BLT Sandwich with Basil Lemon Mayo

I love a good BLT Sandwich! There is something so delicious about the hot bacon, the crisp cool lettuce, and garden fresh tomatoes that makes your mouth say, yes! I know this is kind of over the top, but isn’t that kind of fun?

Ultimate Triple Bacon Triple Tomato Sandwich with Basil Lemon Mayo

Ingredients:

Country Style thick sliced bacon, cooked
Peppered Style bacon sliced, cooked
Canadian bacon, cooked
Beefsteak tomato, thinly sliced
Yellow Heirloom tomato, thinly sliced
Assorted baby heirloom tomatoes, purple, yellow and red, halved
Avocado, thinly sliced
Romaine lettuce leaves

Sourdough bread, sliced and toasted

1/4 cup mayonnaise
1/4 sour cream
1 tbsp lemon juice
Fresh Basil, snipped

In a small bowl, whisk together mayonnaise, sour cream and lemon juice, add basil.
Set aside.

To assemble:

Place desired amount of mayo on toasted bread, top with baby tomatoes, top with leaf lettuce, peppered bacon, country style bacon, and Canadian bacon, yellow and beefsteak tomatoes, sea salt and cracked pepper. Finish it off with toasted bread, press lightly and cut in half.
