Bananas Foster Dessert Nachos



One of my favorite memories is sharing a plate of late night dessert nachos with my daughter Ozma at the famous Del Coronado Hotel. This fun idea crossed with the classic dessert Bananas Foster, makes a fun ending for any fiesta! ~Amy

Bananas Foster Dessert Nachos

Stacy’s Cinnamon Pita Chips
Fresh sliced bananas
Amy’s Caramel Sauce*
vanilla bean ice cream
Torani Caramel Syrup

Caramel Sauce

1/2 cup butter
1 cup brown sugar
1 cup sour cream

In a medium sized saucepan, melt butter. Whisk in the brown sugar, cook until bubbly and lighter in color. Remove from heat and whisk in sour cream. Whisk until smooth.

Makes about 2 cups

To assemble:

Place chips on a platter. Top with fresh sliced bananas. Drizzle lightly with Caramel Sauce. Top with large scoops of vanilla ice cream. Drizzle with Torani Caramel Syrup.
Serve immediately

Bourbon Vanilla Banana Pudding Pavlova


A sophisticated twist on a southern classic, this deliciously light and sumptuous dessert will be a delightful ending to any gathering! ~Amy

Bourbon Vanilla Banana Pudding Pavlova

3 bananas, thinly sliced
1-2 containers meringues, store bought, crushed
Bourbon Vanilla Custard*
Vanilla Whipped Cream*

Bourbon Vanilla Pudding:

1 1/2 cups sugar
2 1/2 tbsp cornstarch
3 eggs
1 cup milk
1 cup half and half
2 tbsp butter
2 tsp Nielsen-Massey Bourbon Vanilla

In a small bowl, whisk together cornstarch and sugar. Set aside.
In a large saucepan, whisk eggs until frothy; about one minute. Whisk in sugar mixture, and mix until well blended. Add milk and half and half. Bring mixture to a boil over medium heat, stirring constantly. Cook until it thickens. Remove from heat and stir in butter. Cool slightly, while stirring.
Add vanilla, and blend well. Cover and cool completely. Or refrigerate until ready to assemble.

Whipped Cream:
2 cups heavy cream
1/2 cup confectioners sugar
2 tsp vanilla

In a medium sized bowl, whip together cream, sugar and vanilla to soft peaks. Refrigerate until ready to use.

To assemble:
Layer crushed meringue, whipped cream, bananas and pudding, alternating, finishing with cream. Garnish with fresh bananas and serve immediately.

Makes 6-8 servings

Fresh Banana Coconut Crunch Yogurt Creme Brûlée

The idea of a breakfast creme brûlée is so much fun, with homemade granola and fresh fruit, the options are endless!~Amy

Fresh Banana Coconut Crunch Yogurt Creme Brûlée

4 cups vanilla Greek yogurt
2 cups sliced fresh bananas
1 cup Crazy for Coconut Granola Crunch

8-10 tsp raw sugar

In small ramekins, layer sliced bananas, granola, and yogurt. Repeat, ending with yogurt. Place ramekins in freezer for 5 minutes. Remove and sprinkle each ramekin with 2 teaspoons. Caramelize the sugar by blowing the torch back and forth across the sugar, until bubbly. Let the sugar harden or place in freezer for a few minutes.

Makes 4-6 servings

Crazy for Coconut Granola Crunch

8 cups old fashioned oats
1 cup shredded coconut

1 cup honey
1/2 cup sweetened cream of coconut,
2 tbsp coconut oil
1 tsp vanilla
1 tsp salt

Large flake Thai Coconut
Macadamia nuts, chopped
Fine shredded coconut

Heat oven to 225 degrees

In a large mixing bowl, stir together oats, coconut.

In a small saucepan, heat honey, cream of coconut, coconut oil, salt and vanilla until warm.

Pour over oat mixture and stir until evenly coated. Place a parchment lined baking sheet and cook for 1 hour, stirring every 20 minutes, or until desired color is reached.

Cool completely. Stir, Thai coconut, macadamia nuts, and fine shredded coconut, into granola and store in a air tight container.

Brown Sugar Bourbon Vanilla Banana Cream Pie

This is my twist on the classic banana cream pie. With a little brown sugar, bourbon vanilla, topped with fresh bananas and whipped cream, and surrounded by a graham crust, this might just be a new favorite! ~Amy

Brown Sugar Bourbon Vanilla Banana Cream Pie

Crust:
1 1/4 cup graham cracker crumbs
4-5 tbsp butter, melted
2 tbsp sugar

Heat oven to 350

In a small bowl, stir together graham cracker crumbs and sugar. Add melted butter and stir with a fork until well blended.

Press mixture into the bottom and sides of a 10 inch tart pan, or pie pan.

Bake for 8-10 minutes or until golden brown. Set aside to cool.

Custard:
1 cup sugar
1/2 cup brown sugar
3 tbs cornstarch

1 cup milk
1 cup half and half
2 tbsp butter
2 tsp bourbon vanilla

In a small bowl, whisk together cornstarch and sugars. Set aside.

Whipped cream:
1 cup heavy whipping cream
3 tablespoons confectioners sugar
1/2 tsp bourbon vanilla

With an electric mixer, beat all ingredients on high until soft peaks.

To serve:

Top pie with fresh sliced bananas and whipped cream.

Fresh Banana And Caramel Ice Cream Soda

My special caramel sauce with bananas is one of my favorite combinations, and it tastes even better with a little dulce de leche and vanilla ice cream! Topped with cream soda and a little whipped cream, it is a classic! ~Amy

Fresh Banana And Caramel Ice Cream Soda

Brown Sugar Caramel*
Fresh sliced bananas
Dulce de leche Ice Cream
Vanilla Ice Cream
Soda: original or New York Vanilla Cream Seltzer
Caramel cookie

Drizzle caramel down the sides of the glass. Layer scoops of ice cream, and fresh fruit into glass. Top with soda and garnish with whipped cream, fresh fruit, and caramel cookie.

Serve immediately.

*Brown Sugar Caramel sauce

1 cup brown sugar
1 cup sour cream
1/2 cup butter
1-2 tbsp half and half, optional

Melt butter over medium heat, stir in brown sugar, cook until bubbly. Remove from heat and whisk in sour cream. Add half and half if a thinner consistency is desired.

Makes 1 1/2- 2 cups
