Smoked Mozzarella and Avocado Quesadillas with Fresh Plum Jalapeño Salsa

A new twist on a seasonal fruit favorite! Fresh plums, jalapeños, and lime, paired with smoky mozzarella and ripe avocados, will make your fiesta fabulous! ~Amy

Smoked Mozzarella and Avocado Quesadillas with Fresh Plum Jalapeño Salsa

Salsa:

2 1/2 -3 cups of diced fresh plums
2 fresh jalapeños, seeds removed and diced
4 tsp snipped cilantro
1 tsp sugar
Sea salt to taste

In a medium sized bowl, toss all ingredients together, and refrigerate until ready to use.

Makes about 3 cups

Quesadillas:

Corn or flour tortilla
Smoked mozzarella shredded
Fresh avocado thinly sliced
Fresh cilantro leaves
Sea salt to taste

Heat tortillas on both sides until just warm. Top with cheese and heat until completely melted, top with avocado slices, cilantro leaves and sprinkle with sea salt.

Serve immediately with plum salsa.
