Key Lime Pie Ice Cream Dessert

My Daughter Ozma and niece Olivia came up with this refreshing and tasty twist on the classic Key Lime Pie! Love it!~Amy

Key Lime Pie Ice Cream Dessert

Ice Cream:

2 eggs
4 egg yolks
1 1/4 cups sugar
3/4 cup key or regular lime juice
2 1/4 cups half and half
1 tbsp lime zest

In a medium saucepan, whisk together, eggs, egg yolks and sugar. When mixture is light and thick, whisk in lime juice. Cook over medium heat whisking constantly until thickened. Remove from heat and whisk in half and half, strain. Stir in fresh lime zest. Refrigerate until chilled. Freeze according to manufacturers instructions. Or pan freeze until firm. Keep frozen until ready to use.

Graham Cracker Bowls:

1 1/2 cups finely crushed graham cracker crumbs
1/3 cups sugar
6 tbsp butter, melted

In a mixing bowl, stir together crumbs and sugar, drizzle with butter and
mix. Press divide mixture evenly into muffin tin, pressing firmly to the bottom and sides.
Heat oven to 375
Bake for 7 minutes or until lightly browned.
Cool completely. Carefully remove from tin and set aside.

When ready to serve, fill cups with ice cream, garnish with a fresh lime wedge. Serve immediately.

Makes 6-8 servings

My special caramel sauce with bananas is one of my favorite combinations, and it tastes even better with a little dulce de leche and vanilla ice cream! Topped with cream soda and a little whipped cream, it is a classic! ~Amy

Fresh Banana And Caramel Ice Cream Soda

Brown Sugar Caramel*
Fresh sliced bananas
Dulce de leche Ice Cream
Vanilla Ice Cream
Soda: original or New York Vanilla Cream Seltzer
Caramel cookie

Drizzle caramel down the sides of the glass. Layer scoops of ice cream, and fresh fruit into glass. Top with soda and garnish with whipped cream, fresh fruit, and caramel cookie.

Serve immediately.

*Brown Sugar Caramel sauce

1 cup brown sugar
1 cup sour cream
1/2 cup butter
1-2 tbsp half and half, optional

Melt butter over medium heat, stir in brown sugar, cook until bubbly. Remove from heat and whisk in sour cream. Add half and half if a thinner consistency is desired.

Makes 1 1/2- 2 cups

When I was about eight years old, my first real adventure in the kitchen was making a fresh blackberry pie. So blackberries have a special place in my heart. Blackberry crumble and vanilla ice cream, swirled with a fresh blackberry sauce, topped with soda and a white chocolate cookie, this tasty treat has brought back great memories for me, and hopefully will make a great one for you! ~Amy

Black and Blueberry Ice Cream Soda

Fresh Blackberry Sauce*
Fresh Blackberries
Blackberry Crumble Ice Cream
Vanilla Ice Cream
Soda: original or New York Blueberry Seltzer
Whipped Cream
White Chocolate Pirouette Cookie

Drizzle the sauce down the sides of the glass. Layer scoops of ice cream, and fresh fruit into glass. Top with soda and garnish with whipped cream, fresh fruit, and cookie.

*Fresh Blackberry Sauce
2 cups fresh or frozen blackberries, slightly thawed
1/4 cup sugar
2-3 tbsp water

Place all ingredients into food processor or blender and blend until smooth.

Brown Sugar Caramel*
Peach Cobbler Ice Cream
Dulce de Leche Ice Cream
Soda: original or New York Peach Seltzer
Whipped Cream
Butter Waffle Cookie

Serve immediately.

New York Raspberry Ice Cream Soda

Fresh Raspberry Syrup*
Fresh Raspberries
Raspberry White Chocolate Cheesecake Ice Cream
Raspberry Sorbet
Soda: original or New York Raspberry Seltzer
Whipped Cream
Meringue Cookie

Drizzle syrup down the sides of the glass. Layer scoops of ice cream, sorbet and fresh fruit into glass. Top with soda and garnish with whipped cream, fresh fruit, and meringue.

Serve immediately

Fresh Raspberry Sauce:
2 cups fresh or frozen raspberries, slightly thawed
1/4 cup sugar to taste
2-3 tbsp water

Place all ingredients into food processor or blender and blend until smooth. Put through fine mesh strainer if desired.

Smoked Mozzarella and Avocado Quesadillas with Fresh Plum Jalapeño Salsa

A new twist on a seasonal fruit favorite! Fresh plums, jalapeños, and lime, paired with smoky mozzarella and ripe avocados, will make your fiesta fabulous! ~Amy

Smoked Mozzarella and Avocado Quesadillas with Fresh Plum Jalapeño Salsa

Salsa:

2 1/2 -3 cups of diced fresh plums
2 fresh jalapeños, seeds removed and diced
4 tsp snipped cilantro
1 tsp sugar
Sea salt to taste

In a medium sized bowl, toss all ingredients together, and refrigerate until ready to use.

Makes about 3 cups

Quesadillas:

Corn or flour tortilla
Smoked mozzarella shredded
Fresh avocado thinly sliced
Fresh cilantro leaves
Sea salt to taste

Heat tortillas on both sides until just warm. Top with cheese and heat until completely melted, top with avocado slices, cilantro leaves and sprinkle with sea salt.

Serve immediately with plum salsa.

Sweet Apricot Cream Soup

One of my favorite things to do in the summer, is to go to The Sweetwater Resturaunt for lunch in Jackson Hole, sit outside, and have their delicious chilled soup of the day! I have made my own version with sweet ripe apricots, orange and creamy Greek yogurt. A delightful pairing for your favorite salad or sandwich. ~Amy

Sweet Apricot Cream Soup

5 cups halved apricots
2 cups orange juice, preferably Simply Orange
1/3-1/2 cup sugar, to taste
1/2 cup vanilla Greek yogurt

Place apricot pieces into blender with 1 cup of the orange juice. When smooth, add remaining 1 cup and blend well. Add sugar and Greek yogurt on high. Chill until ready to serve.

Makes 4 servings
