Fresh Strawberry Snow Caps

Shaved ice with fresh strawberries, lime, and the always delicious, sweetened condensed milk. While the sun blazes hot, this tasty snow cap will be sure to keep you cool! ~Amy

Fresh Strawberry Snow Caps

2 cups fresh strawberries
About 1/4 cup sugar
1 lime, cut into 4 wedges
Sweetened condensed milk
6-8 cups shaved ice

Place strawberries in a food processor or blender, pulse until desired consistency. Add sugar to taste. Layer into glasses, alternating between strawberries, ice and drizzling sweetened condensed milk. Squeeze fresh lime over the top, and serve immediately.

Makes 4 servings

In the summer we all try not to turn on the oven, but sometimes we need serious chocolate, and these are definitely worth it! ~Amy

2/3 cup butter, softened
1 1/2 cup of brown sugar
1 tbs of water
1 tsp vanilla
2 eggs
1/3 cup cocoa
1/4 tsp baking soda
1/2 tsp course salt
2 cups plus 1 tbsp flour
1 cup of milk, or semi sweet chocolate chips
1 cup of white chocolate chips, Ghiradelli are the best for swirling

With an electric mixer, beat butter and brown sugar for about 3 minutes. Add eggs, water, vanilla and salt. Mix until light, add flour, cocoa powder and soda, and mix well. In a 9×13 inch pan place the dough and spread out evenly. Sprinkle the chocolate chips over the top.

Place in oven at 375 degrees for 4 minutes, then using a knife swirl the chocolate. Bake an additional 12-14 minutes.

Makes 1 1/2 dozen

Cary Grant~Black Tie
Black and White Chocolate

3/4 cup corn, popped and sorted
2 cups sugar
2/3 cup half and half
1 tbsp corn syrup
1/4 tsp salt

1/2 tsp vanilla
1/2 cup white chocolate chips, Ghirardelli, or Guitard
1/2 cup semi-sweet, or bittersweet chocolate pieces, melted

Line a large baking sheet with foil, set aside.

Place popped corn into a large bowl. Set aside.

In a medium saucepan, whisk together sugar, half and half, cherry juice, corn syrup and salt. Cook over medium high heat until mixture reaches a Thread Stage using cold water method or 232 degrees, stirring constantly. Remove from heat and stir in vanilla and white chocolate. Stir until smooth. Pour over popcorn and stir quickly to coat. Spread onto prepared sheet to cool, drizzle with melted chocolate. And refrigerate briefly to set.

Makes 8-10 cups

Apple Pie White Chocolate

3/4 cup corn, popped and sorted
2 cups sugar
2/3 cup half and half
1 tbsp corn syrup
1/4 tsp salt

1/2 cup white chocolate piece, Ghirardelli or Guitard
1/2 tsp vanilla

Mix together and set aside:
1/4 cup sugar
1/2 tsp cinnamon
1/2 tsp apple pie spice

Line a large baking sheet with foil, set aside.

Place popped corn into a large bowl. Set aside.

In a medium saucepan, whisk together sugar, half and half, cherry juice, corn syrup and salt. Cook over medium high heat until mixture reaches a Thread Stage using cold water method or 232 degrees, stirring constantly. Remove from heat and stir in vanilla and white chocolate. Stir until smooth. Pour over popcorn sprinkle in desired amount of cinnamon mixture as you stir, stirring quickly to coat. Spread onto prepared sheet to cool, and sprinkle with additional cinnamon mixture if desired.

Makes 8-10 cups

Peanut Butter S’mores Popcorn

3/4 cup popcorn, popped and sorted
1 cup brown sugar
1 cup white sugar
2/3 cup half and half
1 tbsp corn syrup
1/4 tsp salt

1/3 cup peanut butter
1/2 tsp vanilla

4 full sheet graham crackers, broken into pieces
1 1/2 cups mini marshmallows
1/2-1 cup milk chocolate chips, melted

Line a large baking sheet with foil. Set aside.

Place popcorn in a large mixing bowl, stir in graham cracker pieces and marshmallows. Set aside.

In a medium sized saucepan, whisk together sugars, half and half, corn syrup and salt. Cook over medium heat to Thread Stage using cold water method, or 232 degrees, stirring constantly. Remove from heat and stir in peanut butter and vanilla. Pour over popcorn and stir quickly to coat. Spread onto prepared sheet to cool. Drizzle warm popcorn with milk chocolate, and refrigerate to set.

Makes about 10 cups

1 tbsp corn syrup
1/4 tsp salt

1/2 cup white chocolate chips, Ghirardelli, or Guitard
2 tbsp fresh squeezed lemon juice
1/2 tsp vanilla
Zest of 1 lemon

Line a large baking sheet with foil. Set aside.

Place popped corn into a large mixing bowl. Set aside.

In a medium sized saucepan, whisk together sugar, half and half, corn syrup and salt. Cook over medium high heat to a Thread Stage using cold water method or 232 degrees. Remove from heat and whisk in chocolate, lemon juice, zest and vanilla. Pour over popped corn, and working quickly, stir to coat. Spread onto prepared baking sheet to set.

Makes 8-10 servings

Cherry Vanilla Ice Cream

My friend Katy introduced me to this classic flavor, and I was obsessed until I came up with my own recipe. It is delicious topped with either shaved chocolate or salted almonds. Perfect for that summer evening with friends and family. ~ Amy

Cherry Vanilla Ice Cream

4 cups half and half
2 tbsp cornstarch
1 cup sugar

1 10oz jar maraschino cherries, drained, reserve juice
1 tsp vanilla

In a medium sized saucepan, whisk together sugar and cornstarch. Whisk in half and half and cook over medium heat for about 10minutes or until slightly thickened and bubbly. Pour into a heat proof bowl. Cool over an ice water bath, and refrigerate until chilled.

Coarsely chop cherries and set aside on paper towels until ready to use.

Whisk reserved cherry juice and vanilla into cream base and freeze according to manufacturers directions. In the last few minutes add chopped cherries or stir in by hand.

Makes 1 1/2 to 2 quarts
