Sweet Cream Stracciatella Ice Cream


Stracciatella is the Italian name for the American classic; Chocolate Chip Ice Cream. The simple difference is; using a good quality chocolate, that is shaved or grated instead of chocolate chips, giving it a simply delightful crunch! ~Ciao ~Amy

Sweet Cream Stracciatella Ice Cream

5 cups half and half
1 cup sugar
3 tsp vanilla
Dash of salt

3 oz Lindt, or Ghiradelli chocolate bar, shaved or grated

In a medium sized bowl, whisk together half and half, sugar, vanilla and salt.

Pour into ice cream bowl and freeze according to manufacturers instructions.

In the last five minutes of freezing, add in the chocolate shavings.

Makes about 1 1/2 Quarts

Salted Pecan Chocolate Ganache Tart with Fresh Raspberries and Cream


This is a super easy and delicious chocolate tart. Serve with whipped cream and a few fresh berries, it is the perfect dessert for any occasion! ~Amy

Salted Pecan Chocolate Ganache Tart

1 9inch tart pan

Crust:
1/4 cup powdered sugar
1/2 tsp vanilla
1 egg yolk
1/2 cup butter, melted
1 1/4 cups flour
1/3 cup roasted and salted pecan, chopped
1/2 tsp coarse salt

Whisk together, butter, vanilla, powdered sugar, salt, and egg. Add flour and nuts and stir until a fine crumble. Press into tart pan. Bake at 350 for 25-30 minutes or until a golden brown. Pressing lifted crust with the back of a spoon if necessary.
Cool completely.

To make ganache:

1 cup heavy cream
10 oz. good quality chocolate, bittersweet, semi sweet, or milk chocolate, chopped into small pieces.

In a medium sized bowl place chocolate.
In a medium sized saucepan heat cream to almost a boil. Pour hot cream over chocolate and let it rest 5-7 minutes. Stir until smooth. Pour into cooled crust and chill until ready to serve. Dust with cocoa powder.
Serve with whipped cream and fresh raspberries if desired.

My husband gave me this darling bike a few years ago for my birthday, and I have loved riding it around the city on a warm summer night. Throw in some delicious Roasted Chicken and Sweet Cherry Croissant Sandwiches,  Chilled Blackberry Peach Soup, and ice cold minted limeade. A delightful menu for bicycle picnic for two! ~Amy

“Beach Bicycle Picnic”

Roasted Chicken and Sweet Cherry Croissant Sandwiches*
Sparkling Strawberry, Blueberry and Peach Compote*
Minted Limeade ( purchased, add mint and ice)
Chilled Blackberry Peach Soup*
Fresh strawberries
Sea Salt Kettle Chips
Triple Chocolate Truffle Brownies

Chilled Blackberry Peach Soup

1 medium sized fresh peach, peeled and sliced
1 cup fresh blackberries
2-3 tbsp sugar
1 8oz container, vanilla bean greek yogurt
1 cup fresh orange juice
1/4 cup half and half

In a blender, pulse together peaches, blackberries and sugar. Add yogurt and blend well. Add juice, blend and finish with half and half. Garnish with fresh berries and mint if desired.

Makes 3 cups

Roasted Chicken and Sweet Cherry Croissant Sandwich with Sparkling Strawberry, Blueberry and Peach Compote

Roasted Chicken Sandwich:

2 1/2 – 3 cups roasted chicken shredded (about 2 cooked chicken breasts with lemon,
black pepper and olive oil)
1/2 cup finely diced celery
1/4 cup finely diced Vidalia sweet onion
6-7 fresh sage leaves, minced
Zest from 1/2 an orange
1/4 cup mayonnaise
1/4 cup sour cream
Salt and fresh cracked pepper to taste

1 cup pitted and quartered fresh bing cherries
1-1 1/2 apricot jam

4-6 croissants toasted and split in half
Butter or other leaf lettuce (optional)

In a medium sized bowl, toss together chicken, celery, onion, sage leaves and orange zest. Set aside.
In a small bowl whisk together sour cream and mayonnaise. Add to the chickenmixture. Fold to combine.

In a small bowl, stir jam until smooth, stir in cherries.

To assemble:
Layer croissant with lettuce, chicken salad, and cherries. Serve immediately.

Makes 4-6 sandwiches

Sparkling Strawberry, Blueberry, Peach Compote

4 ripe peaches, peeled, pitted, and sliced
1/2 cup strawberries rinsed and sliced
1/2 cup blueberries, rinsed and stems removed
12oz bottle of Blood Orange Italian soda or other favorite fruit soda
Fresh mint

Place strawberries, peaches and blueberries in a ziploc bag or shallow container. Pour sparkling soda over fruit to just cover. Refrigerate remaining soda. Place in freezer until ready to serve. 1-2 hours for slushy consistency.

To serve:
Divide frozen fruit between individual serving dishes. Pour chilled soda over the fruit, garnish with fresh mint and serve immediately.

“Martha’s Vineyard Picnic”

Smoked Salmon, French Herbed Cream Cheese and Capers Crostini
Cucumbers Fresh Dill Orange Olive oil and French Herb Cream Cheese Crostini
Brie, Honey ( Utah) and Fresh Raspberry Crostini
Tri-colored Tomato Salad with Fresh Basil and Orange Olive Oil Crostini
Fresh Spinach, Smoked Gouda, and Mushroom Quiche*
French Baguettes

Fresh Spinach, Smoked Gouda, and Mushroom Quiche

FRESH SPINACH, SMOKED GOUDA & MUSHROOM QUICHE

1 recipe Pastry shell for single crust pie
½ up Chopped onion
1 tbsp Butter
8 Eggs
½ cup Sour cream
½ cup Half-and-half, light cream or milk
¼ tsp salt
1/8 tsp pepper
3 cups Fresh spinach, snipped
1 ¼ cups Shredded smoked gouda cheese

Bake crust at 425 in an 8 inch pie or tart pan until set and dry. (8-12 minutes)

Sauté onions in butter until transparent

In a medium bowl, beat eggs lightly with a fork. Stir in sour cream and light cream, salt and pepper. Stir in onion, spinach, and cheese

Pour egg mixture into the hot, baked pastry crust. Bake at 325 degrees for about 45 minutes, or until a knife inserted into the center comes out clean.

Let quiche rest for 10 minutes before serving.

Makes 6-8 servings.
