Mango Pineapple Pulled Chicken Sliders with Sweet Pineapple and Lime Coleslaw

Mango Pineapple Pulled Chicken Sliders

4 whole cloves
1 tbsp white balsamic vinegar

1 8 oz can crushed pineapple
1 cup ketchup
1/2 cup brown sugar, packed
1/2 cup mango juice concentrate
1/2 cup Hawaiian soy sauce
3 tbsp water
2-3 pounds cooked, rotisserie chicken pieces

12-16 slider rolls

In a small sauce pan, place the vinegar and cloves. Bring to a simmer. Simmer 1 minute, then cool to room temperature. Remove cloves. Set aside.

Place pineapple, ketchup, brown sugar, mango juice concentrate, soy sauce, cooled vinegar and water into slower cooker. Mix well.

Add chicken and cook on low for 4 hours.

Makes 6-8 servings

Sweet Pineapple Lime Coleslaw:

7 cups shredded cabbage and carrots
8 oz can crushed pineapple, drained, juice reserved
I large Granny Smith Apple, seeded and finely chopped
1/2 cup sour cream
3 tbsp sugar
Juice of 2 limes
Zest from 1 lime, optional

In a large bowl, toss apples with lime juice.
In a small bowl whisk together sour cream, sugar, and zest. Add to apples. Stir in pineapple and cabbage and mix well. Add a small amount of pineapple juice if needed.
Cover and refrigerate until ready to use.

Makes 6-8 servings
