Blackberry Passionfruit Ice Cream

2 cups half and half
1 cup fresh orange juice
1 cup passionfruit juice
1/3 cup sugar + 2tbsp
1 tsp vanilla
1 cup blackberries, fresh or frozen
Juice from 1 lime

In a small food processor, place blackberries, lime juice, and 2 tbsp sugar. Process until smooth.

Whisk together orange juice, passion fruit juice, sugar, and blackberry purée. Whisk in half and half, and vanilla. Pour into ice cream container and freeze according to manufactures instructions.

Makes 2 quarts

Red, White and Bleu Burgers


This patriotic themed burger, with chicken, shaved apples, bleu cheese, and topped with a citrus champagne mayo. A definite flag waver at your Memorial Day barbecue!  ~Amy

Burgers:
1- 1/2 pounds ground chicken
2 crisp red apples, like Envy, shaved
2 crisp Granny Smith apples, shaved
Bleu cheese, thinly sliced or crumbled
Field greens
Glazed Pecans
4-6 challah, brioche or kaiser rolls, split in half, buttered and lightly toasted
Olive oil
Salt
Fresh cracked pepper

Champagne Citrus Vinaigrette Dressing
3 tbsp Mayonnaise
4 tsp fresh orange juice
2 tsp fresh lemon juice
1 1/2 tsp champagne vinegar
Olive oil

Zest of 1/2 a lemon
Salt
Fresh cracked pepper

In a small bowl, whisk together mayonnaise, orange and lemon juice, and vinegar. Stir in lemon zest, add salt and pepper taste. Stir in extra olive oil to reach desired consistency.

Divide ground chicken into equal portions, brush with olive oil and season. Heat grill and cook patties thoroughly.

To assemble:
Place desired amount of greens on the bottom half of roll. Drizzle with dressing, top with cooked chicken, Bleu cheese, shaved apples, and glazed pecans. Cover with top of roll.

Makes 4-6 serving

Each sandwich is made with garden fresh ingredients, elegant cheese, and soft pretty pastel colored bread. Making a beautiful ribbon  sandwich.

Pastel Party Sandwiches

Heat Roasted Asparagus, Goat Cheese and Orange Olive Oil Drizzle Pastel Party Sandwhiches

1/2 loaf pastel green sandwich bread, sliced lengthwise, ends removed,

1/2 pound asparagus, trimmed
4 oz goat cheese, crumbled
4 oz whipped cream cheese
2 tbsp sour cream
Sciabica’s Orange Olive Oil, or olive oil with fresh orange zest
Fresh cracked pepper and seas salt

Heat oven to 425

Place asparagus on parchment lined baking sheet. Drizzle with olive oil, sprinkle with fresh cracked pepper and sea salt. Cook for 4-5 minutes until crisp tender.

In a medium sized bowl, mix together cheeses.

To assemble:
On the bottom layer, spread the cheese evenly all the way to the edges. Top with a single layer of asparagus. Drizzle with orange oil, adding fresh cracked pepper if desired. Repeat again. Sandwich should have two layers of filling and three layers of bread. Trim sides, and cut with a sharp serrated knife into desired shapes. Cover with a lightly dampened cloth and refrigerate until ready to eat.

Makes 8 servings

French Herb Cheese, Radish and Black Pepper Pastel Party Sandwiches

1/2 loaf pastel orange sandwich bread
1/2 pound radishes, grated
Fresh pea shoots, trimmed

8 oz whipped cream cheese
3 tbsp creme fraiche
1 1/2 tsp minced scallions or green onion
1 1/2 tsp minced fresh parsley
1 1/2 tsp minced fresh dill
1/2 tsp lemon juice

In a medium sized bowl, mix together cheese and creme fraiche. Stir in herbs and lemon juice.

To assemble:
On the bottom layer, spread the cheese evenly all the way to the edges. Top with a layer of radish. Add a thin layer of pea shoots, and fresh cracked pepper. Repeat again. Sandwich should have two layers of filling and three layers of bread. Trim sides, and cut with a sharp serrated knife into desired shapes. Cover with a lightly dampened cloth and refrigerate until ready to eat.

Makes 8 party sandwiches

Fresh Strawberry Mascarpone and Cream a Pastel Party Sandwiches

1/2 loaf pastel pink sandwich bread

4 oz mascarpone
4 oz whipped cream cheese
1/4 cup confectioners sugar
1/2 cup fresh strawberries chopped
1/4 pound sliced strawberries

In a medium sized bowl, mix together cheeses. When well blended, ad the chopped strawberries.

To assemble:

On the bottom layer, spread the cheese evenly all the way to the edges. Top with a thin layer of sliced strawberries. Repeat again. Sandwich should have two layers of filling and three layers of bread. Trim sides, and cut with a sharp serrated knife into desired shapes. Cover with a lightly dampened cloth and refrigerate until ready to eat.

Makes 8 party sandwiches

Fresh Rose Ice Cream Cups

6 Fresh Roses, stems trimmed, and centers removed
1 Pint Ice Cream
6 Small vases or shot glasses

To remove centers, reach down into the center and gently twist and pull.
Place in water filled vase. Carefully small scoop of ice cream in the center, wiping petals with paper towel if necessary.
Serve immediately.
