Flashback to last year when I decided to take my love of Diet Coke to a new level by making some Diet Coke Chocolate doughnuts! These delicious bite sized treats will be sure to satisfy both your chocolate and Diet Coke craving! Cheers to 2014!
Diet Coke Chocolate Doughnuts
3 cups flour
1/4 cup cocoa powder
2 tsp baking powder
1/4 tsp salt
1/3 cup Diet Coke
1/3 cup buttermilk
1/4 cup butter, melted
2 eggs
2/3 cup sugar
1/2 tsp vanilla
In a medium sized bowl, whisk together, flour, cocoa, baking powder, and salt. Set aside.
In a separate bowl, whisk together, buttermilk, Diet Coke, and melted butter. Set aside.
In a medium sized bowl, with an electric mixer, lightly beat eggs, add sugar, and vanilla.
Alternately, mix flour mixture and Diet Coke mixture into the egg mixture, beating until just blended. Leaving a small portion of flour mixture to be stirred in at the end, cover dough and chill for at least 2 hours.
Roll dough out on a lightly floured board to 1/2 inch thickness. Cut dough with a floured 2 1/2 inch cutter dipping cutter into flour between cuts. Re-roll dough as necessary.
Heat oil to 375 degrees. Cook doughnuts in batches of 2 or 3 at a time, about 1 minute on each side or until golden, turning once. Drain on paper towels, repeat with remaining doughnuts and doughnut holes.
Top with glaze. Recipe follows:
Diet Coke Chocolate Glaze
1/4 cup butter
2 tbsp cocoa powder
1/4 cup Diet Coke
1/4 tsp vanilla
2 cups powdered sugar
In a medium sized saucepan, melt butter, stir in cocoa powder, until smooth.
Remove from heat and whisk in Diet Coke and vanilla, add 1 cup of sugar, and whisk, when smooth, add remaining sugar, and repeat. Dip doughnut tops into glaze and cool on wire cooling racks.
Makes about 1 1/2 dozen
