I am a huge fan of the chocolate and hazelnut combination; so I whipped up this fun recipe that will be perfect to satisfy your chocolate craving!
Chocolate Hazelnut Crunch Mini Doughnuts
1 1/3 cups flour
1/4 cup brown sugar
1/4 cup sugar
1/4 cup unsweetened cocoa
1 tbsp baking powder
1/4 tsp salt
1/2 cup + 2 tbsp milk
1/4 cup sour cream
1/4 cup butter
2 tbsp hazelnut spread, like Nutella
1 tsp vanilla
2 tbsp Hazelnut barista syrup, like Torani brand
Chocolate Ganache Hazelnut Icing:
1/2 cup heavy cream
3/4 cup bittersweet chocolate pieces
2 tbsp hazelnut spread
1 tsp hazelnut barista syrup
1/2 cup Hazelnuts, toasted and finely chopped or mini chocolate chips can be substituted
In a medium sized bowl, whisk together dry ingredients. Set aside.
In a small sized bowl, whisk together egg and sour cream, add milk, butter, Nutella and vanilla.
Mix with dry ingredients until well blended.
Cook batter according to manufacturers instructions.
Place glaze in a small bowl. Prick warm donuts, and brush with glaze over top half of donuts.
In a medium sauce pan, mix together cream, and hazelnut syrup. Bring almost to a boil. Remove from heat. Add chocolate pieces and Nutella. Stir until smooth.
Place nuts or chocolate chips on a small baking sheet plate. When donuts are cool enough to handle, dip the top half into the ganache. With ganache side down, gently press donuts into desired toppings.
Turn over and let rest until icing has set.
Makes about 28 mini donuts
