Caramel Popcorn Bar

You can have the most talked-about party when you stage a caramel popcorn bar. You might have seen a bar-type setup for making hot chocolate or ice cream sundaes. Now take that same concept to personalized caramel popcorn. Everyone can get their caramel popcorn just the way they like it, and in their own individual bag.

Prepare a large bowl of popcorn. If using microwave popcorn, try to use a variety that doesn’t have as much added flavoring.

Prepare caramel sauce. For variety, you can use a couple different types of caramel. Warm caramel is thinner caramel. Thinner caramel coats the popcorn better.

Prepare various mix-ins to add flavor and personality to the popcorn:
mini-chocolate chips
white chocolate chips
M&Ms
Reese’s Pieces
cinnamon sugar
chopped nuts
various candies

Use paper lunch bags. Roll down the top part of the way. Fill the bag about half-way with popcorn. Ladle some caramel sauce over the popcorn. Close up bag and shake well. When the popcorn is well-coated, add other mix-ins to custom make your own caramel popcorn. Shake well again.

Open your bag and enjoy.

Honey Cream Caramel Popcorn Sauce

2 cups sugar
2 cups honey
1 cup whipping cream
4 tbsp butter
1/2 tsp salt

In a medium sized saucepan over medium heat, mix together sugar, honey, and cream. Add butter and cook until to a boil, stirring constantly, until sugar is dissolved. This will take a few minutes. Remove from heat and stir in salt. Mixture will slightly thicken as it cools. Pour into a container until ready to use. To reheat, place caramel in microwave, chafing dish, or crockpot. Warm to desired temperature.

Sweet Caramel Popcorn Sauce

2 cups corn syrup
2 cups brown sugar
1 cup butter
1/2 tsp salt

In a medium sized saucepan over medium heat, melt butter, add brown sugar and syrup. Cook until it comes to a boil. Stirring constantly until sugar is dissolved. It will take a few minutes. Remove from heat and stir in salt. Mixture will slightly thicken as it cools. Pour into a container until ready to use. To reheat, place caramel in microwave, chafing dish, or crockpot.
Warm to desired temperature.

Note: both caramels can be cooked to a soft ball stage to make popcorn balls or for caramel corn.
